The Human Bean's menu includes coffee, espresso and blended beverages, as well as baked goods. "It started up in the Northwest and now it's making its way down to California," she said. The nearest shop is about 200 miles away in Rio Vista. Highfill said she hadn't been to a The Human Bean before starting at the Visalia location. "I have past barista training, but it's definitely a lot more intense because we have a lot more drinks than our competitors." One of those employees, barista Stephanie Highfill, said the coffee shop's soft opening Friday went well. The Human Bean's Visalia location employs 16 people, though the Gibbys said that could change a little bit, depending on how busy the shop is in the future. Starting today, the coffeeshop's hours are 5 a.m. Caldwell Ave., opened briefly Friday morning, and the Gibbys were encouraged by the number of people who drove through. The couple moved to Exeter about two years ago but said they still feel very much at home in Visalia - they built the Jack in the Box right down the street on Caldwell. "We sold (the Jack in the Box locations) about four years ago, and decided about a year ago to get into coffee," Fred said. It's the first coffee shop for franchisees Fred and Kellie Gibby of Exeter, who previously owned a number of Jack in the Box locations in Tulare and Kings counties. The Human Bean drive-through coffeeshop opened today in Visalia at the corner of West Caldwell Avenue and South Stonebrook Street. Visalians now have a new drive-through option for a morning jumpstart or after-work pick-me-up. Granitas, smoothies, baked goods or just a good ole cup o' joe.
